New Year's Day is celebrated at different times/time and involves a variety of customs. However, these celebrations and customs all have something in common--hope.
Should I use times or time in the above and why? Thanks.

'Times' is the correct response. The most obvious reason has to do with the different time zones that we have. And, of course, residents in each time zone would have their own unique way of celebrating the arrival of the new year.

I forgot to mention that some cultures celebrate the arrival of the New Year on a date other than January 1.

That's true and it is the different dates, not the different times zones, that is important.
The grammar of the sentence is the main reason "times" is correct. In particular, 'a different' would go with 'time' and "different" goes with "times".
