Could you please tell me if the dash - in this number structure (when writing) is the only correct format:
One thousand, one hundred and fifty-six.
I have checked several books with no mention of this.
I was taught the following:
One thousand, one hundred and fifty six.

Either would be understood, I believe the dash fifty-six would be found in most texts.
...and written in people's cheque-books after 'amount'!

Yes, it is acceptable if that is how you would like to write it. Just ensure that there will be no confusion with following number strings.
