difference or balance Which answer would you choose?

Teacher I'd use 'balance' for a debt not a purchase.

In the example you have quoted you would pay the difference.
For Examle. Gift certificate has a value of £5 your purchase is £6 you would pay the' difference' which is (£6-£5) £1.
