What do the following sentences with "hands" mean?

1. We are in safe hands. (We are in a safe situation?)

2. You are in such good hands. (We can help you?)

3. He is leaving his north London business in the hands of a colleague. (in the hands of a colleague???)

1. We are in safe hands. = the person in charge knows what they are doing

2. You are in such good hands. = the same as 1

3. He is leaving his north London business in the hands of a colleague. (in the hands of a colleague???) = the colleague was in charge

tdol, Who is most likely to say something like "we are in safe hands"? The people working on some project but not in charge, isn't it?
