Irish Provinces

Hello!

I do not know how should I pronounce the name of an Irish province Munster /mʌnster (according to the rules) or mu(:)nster or maybe mY(:)nster/?
The Irish name Mumhan is quite different but I'm not sure the pronunciation of Munster corresponds to the English rules.

And what is the case with Leinster? /lenster or leinster/ or both?

The local (Irish) accent is rhotic, but in RBP there is no /er/ - just /'mʌnstə/. Likewise for /'lenstə/. Of course, the words 'Munster' and 'Leinster' are probably anglicized transliterations of something Gaelic - about which (Gaelic) I know next to nothing; and in the specific matters of 'Munster' and 'Leinster' absolutely nothing.

. Definitely not /ei/, and /ʌ/ rather than any other vowel; I suspect, though, that in the local pronunciation of a Munsterman, it would be closer to [u] [maybe even [ɔ]].

Many a time in Ireland,I noticed the phonem [^] was near to [u] and a backward[o:]

They have a funny way with vowels. The London-based joke - 'What's sex?'/?/'It's what posh people buy their coal in' - has an Irish analogue: 'What's sex?'?/'It's tea-time in Ballymena.'
