The following words in the quotation mark are from the song Everything I do, I do it for you. But I don't quite understand some points.

"There's nothin' there to hide. "
"So take me as I am, take my life. " Here, “take” means “accept”,right?
"I would give it all, I would sacrifice. "What do “it” and “all” refer to?
"I can't help it, there's nothin' I want more. " What does “I can’t help it” mean?

Here, “take” means “accept”,right?

The first 'take' means, accept, yes. :D The second 'take' means, make use of; she's giving her life to him.

"I would give it all, I would sacrifice.
"What do “it” and “all” refer to?

I believe "it" means, relationship, and "all" means, everthing (i.e., emotion/spirit) she has.

"I can't help it, there's nothin' I want more. "
What does “I can’t help it” mean?

It means, I can't control my feelings (for you). My feelings for you control me.
