It depends on how the subject of the sentence is
relating to you. "Gardening is unimportant to me".
Or what the subject of the sentence is
doing for you. "Gardening is like a therapy for me. I love it". "For" is more emotional than "to".
If I am trying to explain how I understand something written, done or said by someone else, I would say "
to me". "Yes, well, easy for you to do but it seemed damn hard
to me".
If I am trying to explain my own usage, what I did myself , I would say "
for me"
"Ronaldo, you played very well tonight" Yes, it was easy for me to score against Roma tonight", said Ronaldo
Having said that, I beileve that it is hard for me sounds better.
To sum up, I don't think it is important to get involved too much into "to me and for me" structures, as the distinction is really slight even for native speakers except David
