Default Why we say o'clock?

Dear Colleagues

Can you help me answering this surprising question that I have not been able to answer:

O'clock

Why do we put the apostropher after the "o"???

To signify that the " 'f the" has been omitted = two of the clock >> two o'clock

Whenever you see "o'", you can suspect an "of": Will-o'-the-wisp - Wikipedia, the free encyclopedia
Cat o' nine tails - Wikipedia, the free encyclopedia
Hop o' My Thumb - Wikipedia, the free encyclopedia
...
- none of them particularly common, but you may still come across them.
