This sentenc is taken from interpreter books. I would like to know here if there are some problems "with phrase" in the sentence.
With history as long and territory as wide and complexity as China's, it is inevitable that dishes with distinctive regional characteristics have evolved over cources of centuries.

You can use two [or more] adjectives after the preposition.
His mother was tall with a demeanour as dignified and polite as can be.
However, the sentence itself is slightly unclear as to whether "complex" refers to both the history and the territory, or merely to the territory.
Also, is there a typo in this: evolved over cources of centuries ?
