If you do mind - that is, you don't want the person to do/say something- then saying "yes" is the correct response. Because it is an odd construction, people will often say something like " Yes I do, actually" to make their reply clear .

It is a tricky one. It usually leave non-natives speakers with the feeling of confusion.
A: Would you mind...?
B: Yes. I would mind=I do not want what you suggest.
Hovewer,
A: Would you mind....?
B: Sure.
could mean, yeah, go on, I would not mind/I am fine with this or:
sure, I would mind!
It is not about what we say but how we say it (this sure).

Yes, Banderas! Sometimes, we are confused with this expression thinking that the "YES" would mean a positive response but actually otherwise.
So, it's okay to say "I don't mind"?

Only if the question is: "do you mind".
If someone askes "would you mind", say "No, I wouldn't meaning you are ok with what the person suggests.
