Default Brittish vs American spelling

I have a couple of questions concerning Brittish vs American spelling;

summarize or summarise: is the -is-form the correct Brittish spelling, or does it matter?

vulcanization or vulcanisation (or maybe curing?): which is the correct Brittish spelling? (it is a term within rubber manufacturing)

sulfur or sulphur?

American spelling would be 'vulcanization', 'summarize', and 'sulphur'.

cf Merriam Webster:

The spelling sulfur predominates in United States technical usage, while both sulfur and sulphur are common in general usage. British usage tends to favor sulphur for all applications. The same pattern is seen in most of the words derived from sulfur
