I met her + while + I was on holiday in Italy.

    = Clause + while(conjuction) + Clause [X Mode version]

    = Verb Phrase + while(conjuction) + Verb Phrase [UE's version]

    Does that help? :D

Here it is used "during", because it is refer to "the summer" (correct?)

I met here while I was on holiday in Italy.

The sentences are correct, but I would just add this:

I met here while I was on holiday in Italy.

    You've got it! Don't worry. :D

What X Mode means is this: Use during with things and use while with actions/events, like this,

    holiday (thing)
I met her during my holiday. (OK)

    I was on holiday (action/event)
I met her while I was on holiday. (OK)

Please note, sometimes the action/event is left out of the sentence, like this,

I met her while I was on holiday. (OK)
I met her on holiday. (OK)
(Note, you can leave out the words 'I was')

I met her while I was eating dinner. (OK)
I met her while eating dinner. (OK)
(Note, you can leave out the words "I was")

    All the best, :D
