Dave took a road. It was the shortest one.
Dave took a road which was the shortest one.
Dave took a road which was the shortest.
Which one is correct the sentence with one or without one or both?

The letters which are late came today. Is this sentence correct?

No - logically it would be "The letters that came today were late".
