Which one is correct? What is the difference between ear and ears. We have two ears so it should be plural ?

When you mean "the ability to distinguish sound" or "appreciate types of music," idiomatically we refer to one's "ear."
You play by ear when you don't use sheet music.
You have an ear for talent when you can sense someone will be a star.
You train your ear as you learn to hear something particular in music.
