    That and which are relative pronouns;that is used to refer to persons and things;which to things.
    That is used quite often in defining clauses.
    Name any book that you like.
    It is his rudeness that I object to.
    Which is interogative and relative pronoun.
    The house which was burgled is the one at the corner.(defining)
    That house,which was built in 1980 ,has an interesting history.(non-defining.).

    It's a formal way of saying,

    That thing/those things. It/They happen(s).

    That thing/those things [It/They] which happen.

    That which we put in the closet is mine. =

    The stuff which/that we put in the closet is mine.
    The things which/that we put in the closet are mine.

    'which' is a relative pronoun that refers to 'that'; which refers to something mentioned previously/understood, or in the case of your definition, the things that happen that can be described as 'events'.

    That which is is. = All things that exist exist.

    What does'that' refer to? The answer is book in the first and rudenees in the second ;book and rudeness are the precedents.
    What does 'which' refer to? House;house is the precedent.
