Letter to a customer care center
I received a postcard that said I can write back to them to accept a delay in my order, which I want to do. The person who signed the letter just wrote Terry Gradidge, I don't know if Terry is a man's name or a woman's name. What title do I use?

Just address it to Mr Gradidge, and you will no doubt be informed if you are right or not.
We were taught to insert the honorific after the name on a formal letter:
Terry Gradidge (Ms)
Terry Gradidge (Mr)
It made life so much easier and saved so much hair-tearing. It's a pity it isn't done any more.

If the gender is not known will it be correct to begin a letter
Dear Sir/Madam

It is a nice point. No, it is not really the right way, but it is one way to indicate that you are baffled about the person's gender.
Of course, you could just ignore gender, and address it to "Dear Terry", and on the envelope put simply "Terry Gradidge". In this circumstance it probably is not particularly important what you call the person since you are unlikely to be entering into a correspondence.
