Spokesman Javier Mendoza said an air intake gauge under the cockpit had detected overheating while the jetliner was taxiing, causing the plane to turn back.
Is the underlined verb the most used (informal, casual) is this context? Could I say to my wife on the cellphone "Yes, we've already landed but the plane is still taxiing...".

It is the normal term used to describe an aircraft moving on the ground. So yes, you can use it in the way you suggest.
