Honestly, I've only heard it used with "honkin' big" or "big, honkin'" -- I know that makes redundant.

I guess you could use it alone, but only immediately before the noun. No, you cannot say "He's honkin'" to mean he's fat.

Good lord! I reserved a sub-compact car! I don't want some honkin' SUV! - that seem possible, but I'd personally say " some big honkin' SUV"
