I have some pictures of some items(pencil, eraser, scissors, french fries, potato chips). I point to them. Are these sentences correct?

It's a pencil

It's an eraser

It's a scissors (Is this correct? I don't want to use "pair of" any other way to answer?) They are scissors [without the qualifying "pair of", scissors is plural]
What's this? ( should this be "What are these?)
It's french fries (should this be They are french fries)
But you could point at a picture showing a plate containing French fries and ask "What's this?" with the expected answer of "It's a plate of French fries".
What's this?
It's potato chips same comment as above.
