However severe the journey is, as long as I am with nature, I don't care.

This sentence comes from my textbook. Can we use 'I don't mind' without changing much of the meaning?

By the way, 'I am' isn't in contraction while 'I don't' is. Does it sound/ look good to you native speakers?

Yes you can, although "I don't care" is more forceful than "I don't mind."
Yes it sounds and looks fine with "I am" and "don't".
