Red face Showing strong enthusiasm in a firmal letter?

Hi,
Im not a native English speaker and Im trying to write a formal letter to a university professor. I want to say "I am very interested" and i want to show a strong enthusiasm. I dont want to use this phrase. I would appreciate that if someone helps me. Which one of these following sentences is better for a formal letter? or is there any better sentence?

- I am passionate about ...
- I am enthusiastic about ....
- I am eager about ....
- ...

Thanks a lot.
Without knowing the subject it's difficult to be sure but, "I am very enthusiastic about..." seems good.
