Default Grammar explanation

Hello,
Can you tell me the explanation of the following grammatical mistakes.

The original sentence:
All people felt excited, especially my uncle had a lovely smile on his face the evening.

Corrections:
All people felt excited, especially my uncle who had a lovely smile on his face that evening.

Question:
1) why do we need to add who to the sentence?
2) why do we change "the evening" to "that evening"?

'had a lovely smile on his face' functions as an adjective. The relative pronoun 'who' is added to join the noun 'my uncle' with its modifier 'had a lovely...'

My uncle who had a smile on his face felt excited that evening.

The verb is 'felt' and the subject is 'my uncle'. The 'who' clause functions as an adjective.

'that evening' functions as an adverb. It tell us when your uncle felt excited. The relative pronoun 'that' refers back to the evening in question. The phrase 'the evening', although 'the' expresses a specific evening, doesn't express which evening.

Please note,

All the people felt excited,... OR Everyone felt excited,....
