Would you consider "In the evenings" as correct as "In the evening" for habitual actions? E.g. "In the evenings, I like watching TV."
Both forms are widely used, even though "in the evening" seems to be a bit more common.

Yes, it is correct.
Some would say:
Most evenings, I like to watch TV.
I often like to watch TV in the evening.
