Which are correct:

1-In this line of work, pencil is better than pen because you can erase what you have written.

3-In this line of work, pencils are better than pens because you can erase what you have written.

They are all correct, but #1 is the one you will most likely hear.

2 sounds too lofty for the context IMO. You could also have 'a pencil...'
