I want to know which should be used "hand" or "hands"? "I am ever so good" "He is ever so beautiful" both correct? "I am tired" "I am exhausted" "I am tired" have the same meanings?

I would say "hands." You want to imply that both hands are empty.
"She is ever so pretty!" The expression "ever so [adjective]" is used as an exclamation, and sounds quaint to my American ears. Perhaps it is used currently in other parts of the world. Far, far more common is "She is very pretty."
And yes, as was explained already, exhausted is very, very tired.
