That's not exactly a comparison.
"Compared to textbooks that take years to be written and published, a newspaper appears overnight."
In fact, I think a comma with "which" makes a more cohesive sentence.
"Compared to textbooks, which take years to be written and published, a newspaper appears overnight."

If you mean all textbooks, you need to use "which".
