Today is the 3rd year wedding anniversary of Dash and you.
Today is Dash and you's 3rd year wedding anniversary.

Are these correct? However, the second sentence sounds awkward to me.
Today is your 3rd year wedding anniversary.
But when this involves another person...I don't think I should use "your" in the 2nd sentence, right?

I think you can skip the word "year" since by definition "anniversary" happens once a year (annually).
Today is the third wedding anniversary of you and Dash.
Today is your and Dash's third wedding anniversary

I think "Today is your 3rd year wedding anniversary" is fine.

"Today is Dash and you's 3rd year wedding anniversary" is wrong. Don't ever use 'you's'.
