I saw this sentence "he is not that kind of person" but can I say "he is not that kind of people?"

Which one is correct? and why?

"He is not that kind of person" is correct. The other isn't.
It works that way because it means "He is not a person of that kind".

Is "person" correct because "he" is singular?

What if I change "he" to "they"? Will the correct sentence be "They are not that kind of people?"
