You can say
"Mangoes are my favourite fruit."
"Mango is my favourite fruit."
"My favourite fruit is mango".
You can't say "My favourite fruit is mangoes," because 'is' = singular and mangoes = plural.
It's not grammatically wrong to say "My favourite fruits are mangoes," but it sounds strange.
