I don't get the word 'all' here? Is it plural or singular here? How do you know?

1. Are you going to work all thanksgiving weekend, Dad? (How does 'all' work here?)
2. Are you going to work all thanksgiving weekends, Dad? (What does it mean with 'weekends'?)

1. What do you mean by 'each'? Do you mean 'each thanksgiving weekend'? Could you have left 'each' out and said 'every weekend'? What's the point of 'each'?

What do these mean?
1. He is going to work each Thanksgiving weekend.
2. He is going to work every Thanksgiving weekend.
3. He is going to work each and every Thanksgiving weekend.

3. He is going to work (on) each and every Thanksgiving weekend. (Is 'on' optional here? Or does it have a different meaning when I don't use it and vice versa?)

Thanksgiving this year, and next year, and the year after that, and the year after that, and so on. Each individual Thanksgiving weekend, which total up to "every" Thanksgiving weekend.

3. 'on' is optional.

Note, 'really' is synonymous with honestly.
