    please, how do you say when a foreigner speaks a second language in an unnatural, forced, fancy and too much elaborated way, just like if he/she was trying to "prove" something to everyone?

    We call it unnatural, forced, fancy, and overly elaborate!

    I think the word you want is the adjective pretentious - that is, full of pretense.

    Her pretentious speech fooled no one.

    In the example you gave, it should be "what do you say?"
    You may say "How do you say this word?" and show someone a printed word which is unfamiliar to you.

    It depends on the sentence. In your sentence. "How do you say when..." doesn't work idiomatically. You could say:

    How do you say that...
    What do you say when...
    How do you say it when...

    I like: What do you call it when...

    ...because it's asking for a name for something. It's clear, direct, and idiomatically correct.

    Here's are examples of sentences where "How do you say" works:

    How do you say "Thank you" in Russian?
    How do you say to a stranger that you're sorry?
    How do you say three things at once?
