I think this sentence is incorrect ('How much noodles can he eat?') because 'noodles' is a countable word.

So, we should say ' how many noodles can he eat?'. Am I correct?

I think noodles cannot be counted, they are measured by platefuls or by tablespoons. Thus, 'how much noodles can he eat?' is correct.
For 'how many' you have to count each noodle, an impractical task.

I am not a teacher of English, just someone who loves the language.

There's plenty of the noodles left if anyone wants them.

You asked me about possible answers/replies. Neither of your suggestions was correct. I posted the following correct replies:
There's more noodles over there/in the pot.
There's more of the noodles if anyone wants them.

We cannot say, "I have much noodles."

When we ask the question, we say:
"How much of the noodles is left over?"
