The horse, bike and motorbike part are easy enough .... once you have 'boarded', you are ON the horse, bike, motorbike, so you 'get on' them.
As for the rest of them, I think it has more to do with the fact that you can walk onto a bus, train, plane, ship, and once you have boarded you can stand. With a car (or taxi) it's different, you can't walk onto them, or stand once you have 'boarded', so you get INTO THEM. Then you are 'in' a car / taxi.
