    It's a beet soup ( originally Russian) made with shredded beets, potatoes, white cabbage, carrots and onions. From what I know it's served with sour cream on the side.

    I thought the soup was called borsch and as far as I know it origins from Ukraine

    The Encyclopaedia Britanicca suggest that Ukraine is often given as the counrty of origin, and offers several different spellings:
