What does oil do when it's very hot and you spill some water on it? What's the verb?

Couldn't get ur question. If you mean verb in this sentence, the main verb is "do". Then there is a linking verb "is(be)".Then there is 'spill'

What verb should I use to name what hot oil does after I spill some water on it?

Thank you all for your replies!

Am I correct then to think that it's OK to say, "the hot oil splattered into my eye" and it's incorrect to say, "the hot oil spat into my eye"?

I'd say 'spat in' - 'into' makes it sound pretty painful!
