Does it mean to save money dishonestly? Or I jsut could say "I'll try to salt away two grand for Christmas"?

I just means 'save' - nothing dishonest about it.

To "salt money away" suggests secretive, perhaps criminal, behaviour.

I've never associated it with dishonesty. It just means you've preserved it for later use, the way you would salt meat to keep it from spoiling.
