    My mom puts three different ______ in every meal.
    (A) kinds of vegetables (B) kinds of vegetable
    The answer is option A. What's wrong with option B?

    Not a teacher.

    In my humble opinion, because in the sentence, you've already known there are three different vegetables in every meal, it implies an plural noun is used in this situation.

    It's my opinion that B is the right answer.

    '. . .three different vegetables. . .' or '. . .three different kinds of vegetable . . .'

    The Brits seem to use vegetable where Americans use vegetables. Actually, I feel like Jamie Oliver just says "veg." Is that common?

    Eat your vegetables. There were three types of vegetables in that salad. (Just like we'd say "Ironically, she always uses four types of beans in her famous three-bean salad.") You need five servings of fruit and vegetables daily.

    For us, vegetables is plural.
    I'm not a teacher, but I write for a living. Please don't ask me about 2nd conditionals, but I'm a safe bet for what reads well in (American) English.
