Please, can you help me with the following sentense:

„A thousand sheep and counting. One day at the time, Angel, I know.“ I had often said this to him, many times when he told me of his fanciful dreams. „But I van only hope. Let’s get this ruddy war over, get them dirty Krauts where they belong, and who knows, eh?“

A wounded New Zealander talks to a Greek girl during The World War Two. I don't understand that part with sheep.

It doesn't make any sense to me. Perhaps more context would help.
