    Thank you for providing the source of this quote!

    I'm not from Boston, so I don't know the exact meaning of the phrase.
    However, I'm fairly sure it does NOT mean "hold up", which means "rob (usually with a weapon)".

    I hope someone from Boston or the northeast of the US will reply with a good "translation" of this term!

    (NOTE: This is a great example of the different regional variations of American English - I'm from Nevada, and Good Will Hunting was set in Boston, Massachusettes on the other side of the country!)

    In BrE, if you hold/prop up a bar, you stay there a long time drinking. We do have hold up meaning to rob too.

    I am not a teacher.

    It's not "bounce up", it's "bounce". They meant that Casey is acting as bouncer at the bar--he is bouncing. A bouncer is a guard at the door who can fight well. His job is to keep bad people out. "Up" just means "at" here.
