We usually pay for something in cash,
but can we say "I bought the car in cash"?

No.

'I paid (in) cash for the car.'

'I paid for the car in cash.'

kiweep7.
As Rover says .. or "I bought/paid for the car cash down", although this sometimes means to make a part payment first rather than the full amount.

Cheers, guys!

What about "we bought this house with cash"? :-?
Would it be correct or common to say that?

"We bought this house with cash" is not incorrect, but I would more naturally say, "We paid cash for this house"*.

* I wish it were true!

It would be very uncommon; in the UK, if you tried to pay for a house in cash, the lawyers would have to call the police to check whether the money was legal.
