    What would you call a person who's menotring me while I'm writing a research paper? A scientific mentor?

    Is the person a professor? If so, "supervising professor" might work.

    Yes. Could you possibly come up with other terms that might be used in a similar context?

    What exactly do you mean? Supervisor is used for a formal relationship. Mentor is informal. At least here.
