For the answer, does only 2)that work? Why not 3)such? This is a question of some exam, but I think "such" also refers to what was mentioned before, and "that" sounds more awkward.

ex)A: Have you ever tried Thai cuisine before?
B: Yes, I'm particularly fond of _____ type of food
1)the 2)that 3)such 4)some

Is this because "such" is used for what you said, while "that" is for what the other party said?

Such could be used this way, "I'm fond of such food."
Such means about the same as "type of".

If you said "I like such type of food", wouldn't it make the same sense or would it be awkward? I'm sorry I still don't tell the difference between such and that.

But the workbook containing this question says that such has the meaning of indicating previously mentioned nouns, so it can be used here, but the reason why it can't be is it should be like "such a type". As far as I know, I've seen lots of such+noun cases without "a", so I can't help but doubt the book, I'm still not clear about this issue.
