You do refer to the family as a whole as the Smiths. (no apostrophe)

It's okay to just sign "The Smiths" or "The Smith Family", especially if they don't really know your whole family.

If you want to put everyone's name, write "Joe, Susan and Mitch Smith." Some people have each person in the family write their own first name; that is always nice.
