1. I listen to music the genre of which is hard to define.

2. I listen to music if which the genre is hard to define.

3. I listen to music whose genre is hard to define.

Are they all grammatical?

1. I listen to music the genre of which is hard to define.
2. I listen to music [STRIKE]if[/STRIKE]of which the genre is hard to define.
3. I listen to music whose genre is hard to define.
They are grammatically acceptable, with my correction of your typo, but they are all unnatural. We'd be far more likely to say something like, "It's hard to define/categorise precisely the type of music I listen to" or, "It's hard to place the music I listen to into any particular genre".
