In a sentence like this: "One of the several Peters mentioned in the chronicle ...", meaning 'one of the several men called Peter', is it correct to use the plural form? Could also the singular be used? And which sounds more correct?

The plural is correct, and the singular would be wrong without changing the wording.

There is no need to write every word in capital letters. This is considered "shouting" and should be avoided online.
