Default with a a little gray

Is this "gray" an adjective or a noun?

    mo1-2
M: That's too bad. What does he look like?
W: He's got dark hair with a little gray in it. He's about 60 years old.

Because "gray" is the object of the prepositional phrase "with a little gray", it must be a noun.

It's generally an adjective, but all names of colors are names and as such can be used as nouns in the right context.
