[Vocabulary] fascinated

Can we say "stay fascinated by" or is be and become more correct/common? And is it always "by" or can we say "fascinated with"?

I would use remain rather than stay if you want to emphasise that the fascination has endured. You can use both by and with.

It would be more correct to say "I was fascinated by" or "I've been fascinated by" or even "I've been intrigued by" or "I find basketball quite intriguing."
