    a cube of cheese

Is it correct to say "a cube of cheese"?
Is it something used in everyday speech? I mean, "I need a cube of cheese", etc.

In my experience you would typically find a "cube of cheese" at an informal social gathering/party. But if I had a craving for cheese, I might say, "I want a piece of cheese" or "I want some cheese".

And that cube would be bite-sized. If you're talking about a larger piece of cheese, it would be a brick or a round.
