I would use "It has been a long time since we last saw each other."

I am not a native speaker, but I will try my best

It has been a long time since I met you last.
It has been a long time since I last met you.

It has been a long time since my last meeting.
It has been a long time since our last meeting. / It has been a long time since my last meeting with(Not sure about this) you.

It has been a long time since the last met.
It has been a long time since our/the last meeting.

I, too, will wait for a native speaker's answers.

It has been a long time since I met you last. ('since I last met you' also works and sounds more natural)
It has been a long time since my last meeting. ('since our last meeting' would work)
It has been a long time since the last met.
