    They'll scratch your eyes out.

    What does mean `scratch, `eyes out' here in this sentence? (If possible, give me some examples with `eyes out')

    I don't have context. This sentence is to change the voice in my book.

    More generally it is used as a threat:

    If you touch me again I'll scratch your eyes out.
